At Dean’s we are very proud of using time honoured methods and Helen’s original recipe to create our delicious shortbread, so much so we are happy to take you step-by-step through the baking process;
Step 1
We only use the finest Scottish ingredients most of which come from the same suppliers we have always used.

Step 2
Imagine a larger scale interpretation of a kitchen at home, and there you have our prep area.
Ingredients are sieved and mixed to exact quantities in what is literally a scaled up mixing bowl.
Once the dough is of a soft, whipped and light consistency, judged by eye, it is transferred onto baking trays.
The dough is then pricked with a ‘prickle docker’ by hand and is then ready for a slow oven bake. |

| Step 3
The trays are then hand racked and placed in the oven, where their cooking is assessed by eye to ensure the bake is right, a real skill! |

Step 4
When judged ready the racks are lifted out by hand using oven gloves, and whilst still warm, hand cut with a knive and hand sugar dusted using a sieve. |

Step 5
The shortbread is then left to cool naturally just like granny used to do!
(This allows the delicious smell to permeate through the town too). |

Step 6
Once cool the product is trimmed and packed by hand, as quickly as possible to keep all that freshness in. |

So, it’s as simple as that, but it’s all the manual attention and hard working which makes the process longer than it would normally take, which ensures every piece of our shortbread has that Dean’s “melt in the mouth” taste.
