Salmon Fillets with an Oatcake & Parmesan Crust

Choose Scottish salmon fillets for this recipe. The crust of oatcakes, parmesan and fresh parsley combines really well with the salmon to create a delicious supper dish. Serve with salad or steamed vegetables

 

 

Salmon Oatcake
 
   

Ingredients

2 fresh Scottish salmon fillets.

½ x 150g pack Dean's Oatcakes ground into fine crumbs

30g butter, melted

30g Parmesan cheese, finely grated

about a tablespoon fresh parsley, finely chopped

freshly ground black pepper

 

 

Place the salmon fillets onto a lightly oiled ovenproof dish.

Combine the melted butter with the oatcake crumbs, parmesan cheese, melted butter and chopped parsley. Season with a little black pepper.

Spoon the oatcake crumb mixture onto the salmon fillets and pat down well.

 

Place in a pre-heated oven 170degC/ gas 4 for 25 – 30 minutes or until cooked through. Serve immediately.
