Three Cheese Pate with Dean's Oatcakes

Try serving this pate at the end of a meal along with the cheese board. Or take a portion to work to enjoy with Dean's Oatcakes at lunch time.

Three Cheese Pate with Dean's Oatcakes
 

Ingredients

200g (7oz) cream cheese

50g (2 oz) mature Scottish cheddar cheese, grated

25g (1 oz) Parmesan cheese, grated

small bunch of chives, finely chopped

juice from ½ a lemon

2.5mls (½ tsp) paprika

salt and freshly ground black pepper

a few extra chives to garnish

Dean's Oatcakes to serve

Method

  1. In a large bowl mix together the cream cheese with the cheddar and Parmesan.
  2. Add the lemon juice, chopped chives and paprika and mix well. Season to taste and spoon into 4 ramekin dishes. Chill for about an hour.
  3. Garnish with a few extra chives and serve with the oatcakes.

 

Serves 3-4

 

Cook's note:

Any soft, cream cheese will work well in this recipe including the reduced fat varieties, and those flavoured with garlic and herbs.
