| Ingredients
200g (7oz) cream
cheese
50g (2 oz) mature Scottish
cheddar cheese, grated
25g (1 oz) Parmesan
cheese, grated
small bunch of chives,
finely chopped
juice from ½
a lemon
2.5mls (½ tsp)
paprika
salt and freshly ground
black pepper
a few extra chives
to garnish

to serve
Method
- In a large bowl mix together the cream cheese with the
cheddar and Parmesan.
- Add the lemon juice, chopped chives and paprika and mix
well. Season to taste and spoon into 4 ramekin dishes. Chill
for about an hour.
- Garnish with a few extra chives and serve with the oatcakes.
Serves 3-4
Cook's note:
Any soft, cream cheese
will work well in this recipe including the reduced fat varieties,
and those flavoured with garlic and herbs.
