Shortbread Pops

This month's recipe comes from competition winner Arianna! These creative shortbread pops are fun for all the family.

Dough ingredients: 

Dean's shortbread – crumbed 100g

Buttercream (vegetable shortening and icing sugar) 100g

 

Decorations:

Decorative icing (icing sugar, water and food colouring) 50ml

For the animal pops only - sugar paste 50g

Melting chocolate 50g

Sprinkles – as many as you like!

Follow The Steps

Break the biscuits into crumbs. Add buttercream in small amounts, until reaching the desired texture. 

Meanwhile, have your covering ready. Melt the chocolate in the microwave, zapping for a few seconds at the time and mixing continuously. Add a couple of drops of oil if necessary. Arrange sprinkles and icing colours so they are ready to use. If using sugar paste, roll it thin and set aside covered with cling film,, to avoid drying out.

Roll the dough into small balls, pierce with a stick previously covered with netting chocolate for better hold. Once solidly attached, do l dip the pops into the chocolate and cover with sprinkles. Alternative, get creative with sugar paste, as in the example.
