Carrot & Orange Loaf Cake

If you like carrot cake you’ll love this! Our carrot & orange loaf is light and moist, and finished off with a velvety frosting – the perfect tea time treat!

  • 150g self raising flour
  • 100g caster sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 100mls sunflower oil
  • 100g finely grated carrot
  • 2 medium free range eggs
  • zest of 1 large orange
For the frosting:
  • 25g cream cheese
  • 25g soft butter or margarine
  • 1 tbsp fresh orange juice
  • 200g sieved icing sugar

Follow these steps

  • Pre-heat the oven to 170degC. Line a two pound size loaf tin with baking parchment
  • Place the flour, sugar, spices & baking powder into a mixing bowl. Beat the eggs in a separate bowl. Add to the dry ingredients along with the oil, grated carrot and orange zest - beat well to form a smooth batter.
  • Pour into the prepared loaf tin and bake in the pre-heated oven for 45 minutes (approx) or until well risen, golden brown and springy when lightly pressed in the centre. Remove from the tin and place on a wire rack to cool completely.
  • Place all the frosting ingredients in a large mixing bowl and beat well until light and creamy. Spread or pipe over the top of the loaf.
  • Cuts into 8 - 10 slices
