Nutty Cheesy Peaches
This delicious combination is the perfect summer lunch. Filled with sweet peaches and crunchy peanuts, it’s easy to make and sure to be a favourite.
Serves 2
114g sweetcorn
114g cheddar cheese, grated
2 tbsp mayonnaise
2 tbsp cream (or add 2 extra tbsp of mayonnaise)
28g salted peanuts
1 peach
Lettuce leaves
Follow The Steps
Cut the peach in half to remove the stone and then cut into small chunks.
Combine the sweetcorn, cheddar cheese, mayonnaise, cream (if using) and salted peanuts in a bowl. Fold in the peach until well combined.
Arrange lettuce leaves on a plate and spoon the mixture on to the leaves.
Crumble some Extra Mature Cheddar Bites over the nutty cheesy peaches.
